Baking with Pinterest

Don’t worry, you’re not on the wrong blog. I actually did bake – something I used to do quite often back when I worked in an office, though, admittedly, really only out of the box (did the minibar in the background give it away?). But you know how on Pinterest you save things to infinity and never actually do anything with them? Is that just me? Anyway, I decided to actually try out one of those recipes I’d been hoarding and the results were actually pretty great, if I do say so myself.

What you see here is my execution of Tidy Mom’s recipe re-pinned ad infitum, which I found here in its nth life. Basically, you follow the steps on the box but add an extra egg (two if you want it to be extra rich – I may have added five. I suspect one was a twin.). Replace the oil for melted butter and double the amount. Use milk instead of water and then mix well (I actually had to use a hand blender and a whisk because it was so rich). Then just follow the time on the box and wait for the cupcakes to completely cool before frosting. Don’t I sound just like a Stepford wife?

So yeah – there you have it. Semi-from-scratch cupcakes that give my pinning purpose. I think. Anyway, my husband loved them and so did his office buddies, so I’m pleased as punch. Let me know if you try making them. I’d love to know how other flavors and variations turn out.

Lokal Love

In a cluster of vacant spaces and abounding conventionality sits Lokal, a respite for those of us who wish we lived in the kind of city this little joint portrays. Unassuming, unpretentious, and just plain cozy, Lokal is the kind of place where one can enjoy a seriously good burger and a healthy selection of craft beers with only the occasional hipster sighting due to the $2 PBR cooler out by the window. It’s this little haven that saved our evening from Miami’s suffocating moisture and my admittedly poor choice of wardrobe throughout the summer months.

Perhaps it’s my naivete or occasional spurts of optimism that drive me to sign up for “free” events only to arrive and find that I do, indeed, live in Miami, and not Utah, as my husband so articulately likes to remind me – and all that that implies. It was in this sporadic state of idealism that I signed us up for the Rock of Ages premier at the Paragon, to later show up and be reminded that there’s usually a price for “free” and it often consists of sweating in Miami’s unforgiving humidity and standing in line behind what can only be described as the unwashed guy’s oily secretions (it smelled exactly as it sounds).

In the interest of full disclosure, I feel that it’s important to tell you that I suffer from a condition, as yet unnamed, where I often find myself inappropriately garbed and completely unawares until I’ve arrived at my destination that I’ve dressed for an entirely different city. Such was the case last night when I showed up in what I thought to be a completely acceptable casual outfit of dark-washed denim, long-sleeved cotton top, and platform pumps (see below) when what I really should have been wearing was a mu-mu and some flip flops to more comfortably stand in line behind approximately 300 of Miami’s other hopeful movie-goers.

Chalk it up to optimism or sheer delusion. Maybe it’s some underlying M.O. to eventually move to a more seasonal climate. But the fact remains that I was born and raised in Miami and yet still own a wardrobe consisting (without exaggeration) of 60% fall/winter items. We lasted all of twenty minutes before my bangs were plastered to my forehead and my “cute casual outfit” felt more like a winter coat at the beach. Without a chance of getting into the premier before suffering possible dehydration by denim, we cut our losses and decided on dinner.

Walking back, we realized we were stuck in a tourist trap full of franchised fried food so we made for the car and braved rush-hour traffic for about ten minutes when Tony literally turned the car around and said, “Screw this. We’re going to Lokal.” God bless his heart for knowing that a good burger can save any night. It’s probably one of the reasons I married him.

It took only a few minutes and a couple of IPA’s (Deviant Dale IPA, Dogfish Rotating Taps Milton DE, and Lagunitas IPA) to turn the night around. That, a mouthwatering 50/50 burger, some gator strips with an un-posted garlic sauce (thank you, Ms. Bartender), and a genuinely friendly staff. And really, in this city or any, what more could you want?

I know I’m not the first person to cover this place. Far from it. But this post is just a simple thank you from the bottom of my heart – for not falling into the generic food scene this city has seen for too damn long. And for allowing my husband and I a simple night of great food, beer, and conversation. It shouldn’t be such a rare occurrence. But in our transient little city, it tends to be. So here’s to hoping Lokal remains a local favorite, no cliched puns intended. We really look forward to seeing you again soon.

P.S. I love a bar with purse hooks. You’d be surprised how many places overlook this essential little detail. Thanks again, Lokal. From the ladies in Miami with annoyingly large bags that we just can’t seem to get enough of.

A Guide to Office Holiday Party Drinking

‘Tis the Season! I found this great chart on A Cup of Jo, one of my favorite blogs, and a fantastic and enlightening related article on Grub Street New York. Here’s to hoping everyone has a fun holiday season that doesn’t end up with your dancing on the boss’ desk (unless he/she likes that sort of thing)!

Some signs you probably work for a cool company:
• You have been hung-over at work and acknowledged it to your immediate supervisor, only to have her/him respond with empathy.
• There is a pool table at the office.
• You have been skydiving/surfing/to a shooting range with at least some of your co-workers.
• Unique facial hair choices are not discouraged.
• Your holiday party is held at a loft, and people who don’t work for your company try to crash it.
• You often see beer in the office fridge and/or cocaine in the office bathroom, or vice versa.

Some signs you probably don’t work for a cool company:
• You had to take a drug test before you were hired.
• The company has a dress code, which is written down.
• The dress code is so antiquated that it still contains a “casual Friday” section.
• The holiday party is held in the office conference room, in the afternoon, and people try to leave early to beat traffic.
• Your co-workers label their cartons of milk in the office fridge.
• Not one single person has a Mad Men-style minibar in his or her office.

Obviously, the cooler the company is, the more likely it is that one of your co-workers will end up wearing his tie like a headband at some point during the party, meaning it won’t look so bad when you get up on the bar and start signing “Dancing Queen” alongside him.

Peruvian Seco de Res Recipe

Most who know me know that when I fell in love with my husband, I also fell in love with his food. He and his Peruvian family managed to charm me from day one with their Ceviche, Seco, Causa, and Huancaina. It’s been a revelation in dining.

And so, recently, I tried my Cuban hand at recreating one of these Peruvian dishes. I’m relieved to be able to say I didn’t bring shame to anyone’s culture with my first attempt at making Seco de Res (also referred to as Seco de Carne). So here’s the very simple recipe I followed with pics to guide you along the way. Best of luck to you first-timers and let me know how it goes for you!

Also, for those of you who may not be as “adept” in the culinary arts, you can just call on my mother-in-law for some amazing home-cooked Peruvian food delivered to your doorstep.

Ingredients

  • 1 lb Stew Beef
  • 2 stalks of cilantro
  • 3-5 jalepeño peppers or aji Amarillo.
  • 3 tsp minced garlic
  • 1 yellow onion (chopped)
  • 1 cube of beef bouillon
  • 3-4 potatoes chopped into 1” squares
  • Extra virgin olive oil
  • All-seasoning
  • Salt

Preparation

Remove stems from cilantro. Chop jalepeño peppers and mix with cilantro in a blender with 2 tbsp of olive oil and very little water (less than ½ cup). You want it to be somewhat thick.

In a large pan heat olive oil then add chopped onions with garlic and cook on low heat until onions are caramelized. Add beef bouillon while cooking. Mix well.

Mix in beef, potatoes and cilantro mixture. Add salt and all-seasoning and cover pan. Cook for 30min-1hr stirring frequently to avoid burning beef.

South Miami Farmer’s Market

Saturday mornings at the South Miami Farmer’s Market are quickly becoming a treasured weekend ritual. My favorites are the french pastries and espresso stand at the head of the tiny strip, the nameless Peruvian ceviche stand that also sells some of the freshest guac and salsa I’ve ever tried, Crackerman’s herb humus and German bread, and, most recently, the Cheesecake Gallery’s petite bites of happiness. There are also a few stands with fresh produce, organic honey, and enough ingredients to make you want to take on cooking as a serious pass-time. Check it out on Sunset & 61st Ave if you’re in the area. The Market opens at 9:00 a.m. and runs until 12:00 p.m. every Saturday.

Freschetta Simply…Inspired

This post brought to you by FRESCHETTA®. All opinions are 100% mine.

I love pizza as much as the next gal, but make it free and that’s just a whole other level of greatness. The good people at FRESCHETTA® were kind enough to send over a coupon for a free sample of their new FRESCHETTA® Simply…Inspired™. Honestly, frozen pizzas aren’t really my thing but I have to hand it to them – I’m quite impressed.

This particular line boasts eight flavors that sing to my foodie heart. It was hard to pick one from a lineup of potential suitors like Harvest Supreme, Classic Bruschetta, and Chicken Bianco, to name a few, but I finally went with the Rustic Pepperoni Pomodoro – I couldn’t resist the allure of gouda, shiitake mushrooms, and large pepperoni peaking out at me through that great little window in their new (and quite Green) FRESCH-TASTE SEAL™ packaging.

I’ve included an actual picture of the end-result. You can clearly see the amazing ingredients on a thin and crispy crust pie fresh out of the oven. And since it’s unfair that I’m showing off and can only provide you with pics on my blog, I’d like to share the wealth and send you a coupon to try a free FRESCHETTA® Simply Inspired pizza for yourself along with a bonus gift, a bamboo cutting board. Leave a comment on this post and you might be the lucky taster!

Also, if you’d like to keep up with FRESCHETTA® and their upcoming freebies and deals, be sure to “Like” them on Facebook.

Buon appetito!

Not Just Cakes by Patty

Congratulations to Not Just Cakes by Patty on their Grand Opening last Saturday! Tony and I dropped by their quaint little shop last week to say hello and thank them for the delicious birthday cupcakes in Dulce de Leche, Red Velvet, and Guava flavors with just-sweet-enough, cream cheese icing. Turns out, we were their first order. Some things are just meant to be… If you’re in the Sunset area, check them out in the same shopping center as the Sports Grill.

Saint Cupcake

I first learned about Saint Cupcake on Valentine’s Day last year when my hubby saved an email I’d sent him from Daily Candy and placed an order from the truly heavenly cupcake shop on the west coast. Luckily, he kept the tradition alive again this year and had this amazing box of sweet treats delivered just in time for the holiday.

Here are a few pictures before, during, and after assembly. I have no idea how they keep their ingredients so fresh, but the final outcome is truly divine.

db Bistro Moderne – JW Marriott Marquis Miami

Last night, I had the rare opportunity to peek behind the curtain of the new, polished and pristine JW Marriott Marquis Miami. Scheduled for a grand opening this month, I was invited to test the db Bistro Moderne, a little gem of a french restaurant by James Beard Foundation award-winning chef Daniel Boulud. The concept is traditional French cuisine blended with flavors of the American market.

I wish I could tell you I was thorough enough to (stop, breathe, put the fork down and) take some pictures of the many varied perfectly prepared dishes we indulged in (grouper, steak, roast chicken, among a slew of appetizers that barely had names before being devoured by 3 individuals badly in need of a decent meal), but I did regain my sensibility by the time dessert came around. The JW Marriott Marquis Miami opens tomorrow. We hope to return to put a dent in that wine cellar soon.
